Hanging around

Last week Ronnie the chef at my work got the idea to try and start drying/curing some of our own meat. None of us knew where to start and as i had the next day off i got put in charge of heading up the research part of it and by the end of the week, and after a lot of reading up on curing techniques we got the project going. We wanted it to go quick so we chose lamb breast as it is so thin and will dry quickly aslo we tested some wild malard duck from our main course, lamb tongue and hearts so here we go.

 This one had been salted for 9 hrs and hung for 3 days and looks to be comming along nicely the fat is starting to become translucent and the meat a nice dark red  colour. It tastes not to strong of lamb at the moment and has a nise saltyness to it.

 Heres the duck, tongue and heart samples. The tongue had a very strong lamb taste and pleasnt texture,
The heart a deep rich red colour and alot nicer texture than i was expecting.
And the duck is incredibly gamey, rich in duck flavour.

Well thats the first part of the project ill keep the posts comming when we get some more progress with the results.

Sailors Grave

A couple of weeks ago i stumbled across a tattoo shop i hadnt seen before even though ive ridden past it probably a hundred times. What made it even better was that the owner of the shop (Sailors Grave) was a aussie by the name of Judd Ripley.  After a phone call and a quick consult before work one day he said he could fit us in for some smaller work if he had space on my days off. It took a little while but we finaly managed to get something going on saturday and heres the result.

Needless to say i was stoked on what he did in the hour or so he could fit me in for,  before he had to run off on a winter surf trip to sweden. Autumn days

Autumn here has so far been amazing and probably better weather than summer and while we wait for the dredded Danish winter which we have been warned about since we arrived we have been making the most of the crisp, foggy and sunny days by gettting out out side and taking in the amazing colours which are all around the city thanks to all the deciduous trees dropping there leaves. We even managed to pop in a quick trip to Kitz for a day and even though we had to drive for 13hrs there and back we still had a rad time hanging out with sophias family and the Mellis, it was defiantly not enough time there and i cant wait to get back over christmas and new years to get some more mountian time in.
We got some time to head down to the beach one foggy day to lookk for some beach herbs and were quite sucessful

After talking about it for some time last week i finally decided to take my camera and tripod with me to work in the hope that on my way home i maight feel motivated to take some nite pics of the amazing lakes which i cross twice every day on my way to work and back. And this what i came up with at 2am while i was waiting for sophia to finish work. enjoy

Berlin

Well i seem to be getting into a very lazy habit with this blog thing lately but the time here has just been flying by and tonite were even eating at Noma so heres just a few pics of whats been going on the last month and soon there will be some from the dinner tonite we are super excited.
 So a few weeks ago i got a plane to my friend kenos birthday in Berlin and had some time to cruise around while i waited for the others to awake from thier slumber from the big party that i had missed the nite before.
 The next days we had some super fun times, Another rather large party of which i have no pics followed by another day of eating lots of junk food and feeling sorry for ourselves which lead to the no drinking sunday nite glow in the dark minigolf tournament.

 The next day the Cous Kat took us on his berlin walking tour before we had to catch our flights, and apparently they dont have buildings this big in oslo, Adam was toatly amazed.

All in all it was a pretty awsome two days catching up with everyone again from all over the place and i defiantly came back to copenhagen tired from to much laughter Good Times.

Still here!!

Once again its been to long since i have posted on here and i guess once again its due to me being a busy but mostly lazy fuck. Since i last posted theres been a few nice days in amongst the terrible weather where we got to the park, did a bit of fishing went to a free music festival in malmo sweden and even got to go to the noma overnite staff party where i secured myself a nice two day hangover, a fitting end to my time there at the restaurant. So with out saying to much heres the last month in photo form.

 We started growing some radish. This was after one week, there almost ready to eat now.
 The usual fishing spot again. Went there today and got a nice hornfish.

 We got picked up by this rad boat and set sail for a fishing town 2hrs south of copenhagen.
 10.00am And the waiters hadnt slept all nite and were getting back on it with the rest of  us.
 We had lunch and more beers at the fishing village and just wanderd around.
 Good head.
 Trying to secretly smoke a blunt around senior tourists is always interesting.
 2.00pm Jumped on a bus with possibly the funniest human alive, a box of noma beer and a 2hr bus ride to the next destination, no idea where we were at this point.
 Where we stayed for the nite before it was destroyed. Very nice place
5.00pm Gearing up for drunken soccer match in the rain.
10.00pm Believe it or not but this guy is actuall an aussie.
11.00pm Slam dancing to system of a down in school disco fashion.
 12.30am and some random people in my room crashin out allready

So that was it more pics of the concert where we got to see NOFX, Bouncing Souls and Boy Sets Fire next time so untill then enjoy yourself.
