Busy week...pt 1

Its been a busy week up here both at work and at home first at noma i got to help with the first photoshoot for the next noma book and it was crazy 50 dishes in 2 days and product photos ontop of that aswell. Needless to say i was run into the ground chasing up ingredients and busy prepping all week to get ready for this epic task. All in all it went perfectly smooth and i could count the tense moments on one hand, it was also a great experience because i got to see more dishes in two days than most stagiers would in thier entire time there, especial considering some of these dishes have never been put on the menu and just kept aside for seasonal VIP dishes. It was a great privilege to be a part of it and heres some pics of the dishes we did enjoy.
 Pike w/ cabage dill and verbena
 Brown crab w/ soll and watercress gells
 New danish potatos w/ milk skin and watercress
 The Boss Rene going to work
 Carrots w/ speck and watercress sauce
 King crab w/ leeks, truffel and dill
 Pages of a book before there a book
 Snails in thier enviroment (milk skin and grass sauce)
 Deer w/ chanterelles, fern hop shoots and fresh wild seed crumb
 24 hr Lamb breast w/grilled cucumber and celeriac
Cucumber milk ice w/ fresh cucumber, elderflower and dill.

So as you can see this is just a small amount of what we did and i was unfortuantly i didnt get pics of all the dishes as i was working at the same time and most of these pictures were taken in the pot wash as i was cleaning up after the guys.
